- Shoofly Pie

- Liquid Layer-
- 1/2 Tbsp baking soda dissolved in 3/4 cup boiling water, cooled
- 1/2 cup molasses
- 1 egg yolk, beaten well

- Crumb Layer-
- 3/4 cup flour
- 1/2 tsp cinnamon
- 1/8 tsp nutmeg
- 1/8 tsp ginger
- 1/8 tsp cloves
- 1/2 cup brown sugar
- 1/2 tsp salt
- 2 Tbsp butter (margarine or crisco)

- Pie Shell-
- 1 unbaked 9 in. pie shell

- Combine the liquid ingredients. Be sure the soda water is not too hot.

- Combine all crumb ingredients except for the butter. Mix well and then
- stir in the butter using a fork. Work until it is a crumb consistency.

- Put 1/3 of the crumb mixture in the bottom of a pie shell. Pour on 1/2
- of the liquid mixture. Top with 1/3 of the crumb mix. Add remaining
- 1/2 of the liquid mix and then finally, top with the remaining crumb mix.

- Bake at 400 degrees F for 10 min., then reduce oven temperature to 325 F
- and bake until center is firm so that a knife comes out cleanly when
- tested in the center (about 30 min at 325).
